Smoke Dreams
In 1991, after nearly two decades working in Vermont restaurants, chef Bill Noel struck out on his own, building a small smoker adjacent to his home in Rutland. He'd already been experimenting with the art of smoking salmon and trout and wanted to develop his own recipes using apple wood, the freshest of fish and gourmet ingredients.
Besides the years of long, hard work and late hours in restaurant kitchens, working for others had gotten old. Noel dreamed of starting his own business. but the determining factor was Noel's desire to have more time at home with his wife Kim and their five small children.
He began small but soon needed a commercial smoker to meet the growing demand for high-end products such as caper butter and pesto butter, smoked trout fillets, apple wood-smoked salmon and Vermont trout and smoked trout cream cheese - all made with purely natural ingredients and without preservatives.
Since then, his business, New England Smoked Seafood, has prospered, as has his catering business, Noel's Catering, which features a full line of food and services. All this has created a new challenge - meeting the demand for his products without getting too big.

Noel says he does this by concentrating on quality over quantity, hiring a few well-trained employees, and working with specialists in the distribution business.
"Besides," he jokes, "the kids are getting older. They'll be helping out some day soon."
Once only available in Vermont, Noel's products are now sold throughout New England, New York and New Jersey.

We Use Only The Best Ingredients

At Noel Specialty Foods we use the freshest ingredients available. We are all natural, using no preservatives what so ever!
Chef William started making his flavored butters and cream cheese spreads 16 years ago while employed as a chef at an award-winning restaurant. For our dinner guest, we would place the product on the dinner table as a starter with an assortment of crackers and vegetable sticks every one loved it so we started packing it and selling it.
Gabriel Lennon, Noel’s Production manager and his staff, now produces all of our products. Our product line is made to order.
Noel’s is H.A.C.C.P. certified and in compliance with the F.D.A.
Noels uses Vermont’s own Cabot’s butter for all of our flavored butters.
For our cream cheese needs we use only Philadelphia cream cheese.
We make all of our products in small batches, which gives us the quality we must pass onto you.

Noel’s does have their own refrigerated truck for warehouse deliveries.
Noel’s specialty foods will ship our products using insulated coolers, shipping next day air for anyone living outside our shipping zone, and next day ground for anyone within our zone.

Our Products
Noel's Cream Cheese Spreads

Our delicious flavored cheese spreads: Garlic Herb Dip, Smoked Salmon Spread, Smoked Trout Spread |
Our cream cheese spreads are made fresh to order, using only Philadelphia cream cheese.
After gently whipping the cream cheese in small 20 pound batches we then add Noel’s own smoked salmon or smoked trout and other fresh ingredients. The texture of our cream cheese is very smooth with that gourmet taste!
Once all of the ingredients are folded into the cream cheese it is then packed and placed immediately into the walk-in cooler for distribution.
Note: our smoked trout cream cheese was first created at a fundraiser event for then
Governor of Vermont Howard Dean at the Lilac Inn located in Brandon, Vermont. Soon after, chef Noel started producing smoked salmon and garlic herb cream cheeses.

Noel's Flavored Butters

Chef Noel, while employed as an executive chef created flavored butters for his own culinary uses. Flavored butters are meant to make things easier for the average cook and even for the professional chef. All the flavor you would ever need to make your food taste great is all in a container of Noels Specialty foods flavored butter. Using Vermont’s own Cabot’s butter whipped at high speed until the butter is light and fluffy. Now we add our ingredients such as capers or pesto and fresh chopped garlic. The trick to using Noels butters is to add the butter at the end of any cooking process, for example: bake salmon at 350 degrees for 12 minutes and remove, before you serve it place a spoonful of Noel’s Flavored butter right on top.
